I just finished baking a batch of flourless peanut butter cookies for a friend with celiac disease, as these are some of the only baked goods she can enjoy. Super easy (see below) and so decadent it’s hard to stop at one (as I can attest).
Flourless Peanut Butter Cookies
1 cup peanut butter (if using natural, make sure it’s the no-stir variety (like Maranatha))
3/4 cup sugar
1 egg, lightly beaten
1/2 tsp baking soda
1/4 tsp salt
1/2 cup roasted peanuts (optional)
1/2 cup semi sweet chocolate chips (optional)
Preheat oven to 350 degrees and place racks on top and bottom third of oven. Mix all ingredients together, then with moistened hands, roll into balls (using about 1 heaping tbsp of dough) and bake for 12-15 minutes, rotating pans around and to opposite racks halfway through. Remove from oven and let cool 5 minutes (cookies will still be soft) before moving to rack to finish cooling. Makes about 24 cookies.
