It seems that there’s a movement afoot to change the requirements of what constitutes chocolate. Instead of requiring that the fat component be cocoa butter, the FDA is entertaining allowing any old fat to be used…vegetable oil?
Guittard, that producer of fantastic chocolate chips (among many other chocolate delicacies), has spearheaded a campaign to alert the FDA to the utter wrongness of this, and urge them to reconsider. Anyone who considers themselves a chocolate lover should get involved. Stat!
